Place one cake layer on the cake turntable. Cover the top of with a layer of icing and then a layer of sliced strawberries. Add the second cake layer on top.
STEP 2
Ice the cake
Using a straight spatula, ice the top and sides of the cake.
STEP 3
Smooth out the icing
Using an icing smoother, even out the icing while slowly turning the cake turntable. Use a straight spatula to smooth the edges of the cake.
STEP 4
Prepare the rosette icing
Use food colouring to tint the icing to your desired shade or shades. Fit an icing page with a large rosette icing tip and fill the bag with icing.
STEP 5
Create large rosettes
Make large rosettes by squeezing out icing as you move the tip in a circular motion.
STEP 6
Create small rosettes
Fill in the areas around the large rosettes with smaller ones by squeezing out a small amount of icing while holding the tip still.
