Q: The Paderno knives need to be sharpened to 12° Does this sharpener maintain that angle of edge? It doesn't say anywhere I can find?

A: They are factory sharpened to 12 degrees but as they ae made of the softer German steel i wouldn't sharpen past 15 and really keep them at 20 for longer lasting edge. 12 is for super hard Japanese knives and they do 12 from factory to make the knife feel sharper but it'll dull fast

Too expensive, performance suffers.

Weak when correcting the angle on a hard blade. I found the ceramic sharpener gave way to the bad edge and it was damaged with little use. For the price it is no better than some cheaper units, only this one has more options for more angles. I bought this one only because I was in a rush, so I'd not buy this one again. There are many better offerings from competitors at better prices. I honestly considered returning for refund, but it would have been hard to argue the issue was not from abuse so I didn't bother.
