Q: What is the standard processing time for the 125 ml. jar? Normally 10 min. for 250 ml and 20 min. for 500 ml. I tried 6 min and got a liquid result. ( For grape jelly using concord grape juice)

A: “When canning a recipe for jam, jelly or other soft spreads that doesn’t specify a processing time for the 125 mL jar, follow the same processing time as if it were a 250 mL jar - 10 minutes for jelly (adjusting for altitude as needed). The length of processing time is related to food safety and the vacuum seal on the jar. It does not affect the result of the gel. Be sure to use a tested recipe from a reliable source, measure ingredients accurately, and cook the jelly to the correct temperature. After processing the jelly for 10 minutes, allow jars to cool 24 hours before checking the gel. Some recipes may require up to two weeks before the jelly sets.”

A: Freezing with BERNARDIN® Mason Jars: These jars are the perfect containers for freezing no-cook jams, as well as other foods intended for refrigerated storage. Simply thaw frozen jars in the fridge and they’re ready to serve. Unlike plastic, mason jars do not absorb food colours and flavours. They are dishwasher safe and can be sterilized in boiling water if desired. Because they can be reused over and over, mason jars are an economical choice for freezer storage. IMPORTANT: All mason jars that have straight sides and no shoulders may be used for successful freezing. When freezing, food expands upward and does not take the shape of its container. This can cause jars that are not appropriate for freezing to break.
