Q: I want to use 2 compartments instead of 3 so to make it bigger. Can I use 2 foil pans or 2 glass pans (if it fits) instead of the containers that comes with it?

A: The top part comes off so it becomes a hot plate. You can place anything on it to keep it warm. Hope that helps.

Q: You state the capacity as 3 2.5 quart (12L) vessels but 2.5 quart is approximately equal to 2.4L, so what is the correct volume?

A: 1 US Quart (liquid) is 2.366L; 2.5 quarts = 5.9L; 3 compartments x 2.5 quarts (or 5.9L) = Total of 7.5 quarts (17.75L)

Q: Can this be used in a small take out restaurant Also the ad state it will keep food warm for up to 3 hours; is the three hours the maximum length of time it can be operated for at one time or is there another reason.

A: I think that the 3 hours have more to do with bacteria growth - if it sits too long at that temperature, then you could get some nasty stuff growing.
