What kind of cutting board is best for good knives?
Wood and plastic-polypropylene cutting boards are best to keep your knives sharp. Polyboards are often made with nonabsorbent materials to resist stains and odours. They are also easiest to clean, as they can be cycled through a dishwasher. Wood boards are heavy and won’t slide around on counters. They are also easy to resurface and don’t retain bacteria.
Do plastic cutting boards dull knives faster?
Both plastic and polypropylene cutting boards are soft enough to prevent your knives from dulling too quickly. Ensure you avoid cheaper boards made of hard plastic to retain the integrity of your knives.
